Simple Roasted Vegetables

I adore vegetables. You can eat them raw, cooked, steamed, sauteed, or stir-fried. But my favorite way to eat vegetables is to roast them. They caramelize in the oven and some how tastes even better and with vegetables such as tomatoes, they become sweeter. It’s so simple my 10 year old can do it. Cut the vegetables up, toss them in olive oil, salt, and pepper. No skin off your nose. The oven does everything for you! 

Ingredients

1 cup of Brussels sprouts, cleaned and halved
1 cup of Broccoli florets
1 cup of green beans, trimmed
1 cup of whole cherry tomatoes
2 tablespoons olive oil
salt and pepper, to taste

Instructions

1. Preheat oven to 425.

2. Put vegetables on a 9 “x 13” rimmed baking pan. Add olive oil to coat. Sprinkle salt and pepper, to taste.

3. Roast for 25 minutes.

Serve on the side to compliment any meal. Or enjoy with rice and 1-2 dashes of balsamic vinegar as a vegetarian meal.
