This recipe was given to me by my mother-in-law, Dorothy. Her mother, Clara, made baked pineapple for the holidays and special occasions. It’s considered a side dish. But it’s so rich and delicious, I call it dessert. I hope you will love it as much as my family does!
2 teaspoons flour
1/2 cup granulated sugar
3 eggs, beaten
1 – 20 oz. can crushed pineapple (packed in pineapple juice, not syrup), drained
1 stick butter
4 slices white bread, crust cut off and cubed
1/4 teaspoon salt
1 – 2 teaspoons cinnamon sugar
Preheat oven to 375 degrees. Spray square Pyrex dish with a nonstick spray, such as Pam or an equivalent.
Mix flour and sugar in quart measuring cup. Put sugar in before flour to avoid lumps. Add salt.
Add beaten eggs and drained pineapple. Mix well. Pour in prepared dish.
Melt butter in microwave. Take care not to burn it.
Put cubed bread into the melted butter. Mix gently until all cubes are coated.
Arrange cubes evenly over pineapple mixture. Pour any leftover butter on top of cubes.
Sprinkle cinnamon sugar (to taste) evenly over the tops of cubes.
Bake for 30-35 minutes or until knife inserted in center comes out clean.
Enjoy! Maybe be served warm or cold. Cover leftovers and refrigerate.
